Preparing the Broth

Caramelize the Onions

In a large pot, melt the butter over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 25-30 minutes.

Add Garlic

Stir in minced garlic and cook for another 1-2 minutes until fragrant.

Simmer the Broth

Pour in the beef broth, add thyme, bay leaf, salt, and black pepper. Bring to a simmer and let it cook for at least 30 minutes to let the flavors meld.

Assembling the Soup

Prepare the Baguette

Slice the French baguette into thick slices and toast them in the oven until golden brown.

Serve the Soup

Ladle the hot broth into oven-safe bowls, place a slice of toasted baguette on top, then sprinkle with mozzarella cheese.

Add Puff Pastry

Cut the puff pastry into circles that fit the bowls, place on top of the cheese, and sprinkle with grated Parmesan.

Bake

Place the bowls on a baking sheet and bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until the pastry is golden and puffed.
