Chicken Preparation

Prepare the Chicken

Preheat your smoker to 250°F (120°C). Rub the whole chicken with olive oil, salt, black pepper, garlic powder, and paprika. Place the chicken in the smoker and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).

Make Jalapeno Honey

In a saucepan, combine honey and sliced jalapenos. Heat gently until warm and infused, then remove from heat and let cool.

Prepare the Ribs

Rub the St. Louis ribs with brown sugar, smoked paprika, onion powder, cayenne pepper, salt, and pepper. Place the ribs in the smoker alongside the chicken and smoke for about 4-5 hours, brushing with Lumberjack BBQ sauce during the last hour of cooking.

Slaw Preparation

Make the Slaw

In a large bowl, combine shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, salt, black pepper, and sugar. Mix well and refrigerate for at least 30 minutes before serving.

Serve the Dinner

Once everything is cooked and rested, serve the smoked chicken with jalapeno honey, the ribs slathered in BBQ sauce, and the house-made slaw. Add your choice of side such as cornbread or baked beans.
