Method
Prepare the Pork Belly
Step 1
Preheat the oven to 300°F (150°C).

Season the pork belly with salt and black pepper. Heat vegetable oil in an oven-safe skillet over medium heat.

Sear the pork belly for about 5 minutes on each side until golden brown.
Step 4
Transfer the skillet to the oven and roast for 2 hours or until tender. Let it cool before slicing into bite-sized pieces.
Pickle the Vegetables
Step 1
In a bowl, combine carrots, red onion, rice vinegar, sugar, and salt. Mix well.
Step 2
Let the mixture sit for at least 30 minutes to pickle.
Make the Aioli
Step 1
In a bowl, whisk together mayonnaise, soy sauce, and minced garlic until smooth.
Assemble the Bites
Step 1
Toast the baguette slices until golden brown.
Step 2
Spread soy garlic aioli on each toast, add a piece of crispy pork belly, top with pickled vegetables, chopped cilantro, and crushed peanuts.
Step 3
Drizzle hoisin sauce over the top before serving.
