Trim and slice
Pat the pork loin dry with paper towels. If the piece is thicker than 1 inch at the center, butterfly it and press gently to create an even thickness. Using a very sharp knife, cut the pork into thin, delicate slices about 1/8–1/4 inch (3–6 mm) thick. Aim for generous center-cut pieces so each slice includes the meatiest portion. Arrange slices in a single layer on a plate.
Lightly season both sides of each slice with kosher salt, black pepper, garlic powder, and smoked paprika. Press seasoning gently so it adheres.
Sear & Finish
Finish with butter and aromatics: Reduce heat to medium-low. Push the pork to one side and add butter and minced garlic to the pan. When butter foams, tilt the pan slightly and spoon the butter and garlic over the pork slices for 30–45 seconds to glaze and finish cooking. Squeeze lemon juice over the slices and remove the thyme sprigs.
Check doneness: Because the slices are thin, they should reach a safe internal temperature quickly; pork is safe at 145°F (63°C) with a 3-minute rest. If you do not have a thermometer, ensure slices are no longer pink in the center.
