Chill glass

Place a martini or coupe glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink to ensure the glass is well chilled.

Prepare ingredients

Pit two green olives if not already pitted. Cut a 1/2-inch wide strip of lemon peel about 2–3 inches long, avoiding too much white pith.

Build and stir

Fill a mixing glass or shaker tin with ice (about 1 cup). Pour in 2 oz Roku Gin and 0.5 oz Dolin Dry Vermouth. Stir with a bar spoon for 20–30 seconds until the mixture is well chilled and slightly diluted (the mixing glass should frost on the outside).

Strain

Discard the ice or water from your chilled serving glass. Using a julep or fine strainer, strain the stirred cocktail into the chilled martini or coupe glass.

Garnish / Finish

Express the lemon oils: hold the lemon peel over the glass, skin side down, and give it a firm twist to spritz the surface of the cocktail with citrus oils. Optionally run the peel around the rim for extra aroma, then discard or drop it into the drink per preference.

Skewer the two pitted green olives on a cocktail pick and rest across or lay gently into the drink. Alternatively, drop the olives directly into the cocktail.

Serve immediately while very cold.
