Build & Stir
Place a mixing glass or a stirring vessel on a bar towel. Add large ice to the mixing glass to chill it, then pour in the gin, Campari, sweet vermouth, and the bottled St. Agrestis 'Phony Negroni' blend. Using a long bar spoon, stir gently but steadily for 20–30 seconds (about 20–30 full revolutions) until the mixture is well chilled, properly diluted, and slightly viscous.
Prepare Glass
If serving over a large ice cube, place the cube in a chilled old-fashioned or rocks glass. If not, fill the glass with fresh ice to the top.
Strain & Finish
Strain the stirred cocktail from the mixing glass into the prepared rocks glass over the large ice cube (or fresh ice). Express the oils from an orange twist over the drink by holding the twist with the peel facing down and giving it a sharp pinch close to the surface; then rub the rim of the glass with the twist and drop it into the drink as garnish.
Serve
Serve immediately. Optionally offer a small carafe of the bottled St. Agrestis blend on the side for guests who prefer a slightly stronger bottled note or to top up their glass.
