Build and dry-shake
If using egg white: add 0.5 egg white to a cocktail shaker (or 1 whole egg white if you prefer a thicker foam). Pour in 2 oz Lillet Rosé, 1 oz Tito's vodka, 0.5 oz St-Germain, 0.75 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes orange bitters.
Dry shake (if using egg)
Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify the egg white and create a silky foam.
Shake with ice
Open the shaker, add about 1 cup of ice, reseal and shake hard for 12–15 seconds until the outside of the shaker is very cold (or about 10–12 seconds if you didn't use egg white). This chills and dilutes the drink properly.
Double strain and serve
Double-strain the cocktail into a chilled coupe or Nick & Nora glass (use a fine mesh strainer in addition to the shaker strainer to remove small ice shards and egg solids).
Garnish
Float a thin lemon wheel or dehydrated grapefruit slice on the foam, and add an edible flower if desired. Serve immediately.
