Place the bottle of Jules Desjourneys Pouilly-Fuissé 2020 in an ice bucket filled with a 1:1 mix of ice and cold water for 20–30 minutes to bring it to about 10–12°C (50–54°F). If already cool in the fridge, remove 10–15 minutes before serving to avoid being too cold.

Chill and open

This wine is typically round and indulgent with a long finish; pour a small taste after opening and let it rest in the bottle for 10–15 minutes. If the wine shows any youthful tightness, gently decant into a clean decanter for 20–30 minutes to allow aromatics (butter, stone fruit, light oak) to open up.

Use large-bowled white or Burgundy glasses to concentrate the wine’s aromatics. Pour about 120–150 ml (4–5 oz) per glass to allow swirling and to smell the wine. Hold the glass by the stem to keep the temperature stable.

If desired, warm the baguette slices briefly: preheat oven to 175°C (350°F). Arrange slices on a baking sheet, brush lightly with 1 tbs melted butter (optional), and toast for 5–7 minutes until just golden. Remove and let cool slightly.

Prepare bread slices

Take the soft cheese out of the fridge about 20–30 minutes before serving so it becomes supple and expressive. Spread a thin layer of room-temperature butter (about 1 tbs) on a few bread slices, then add 1–2 slices of the cheese on top. Drizzle each cheese-topped slice with about 1/4 tsp honey and sprinkle with a pinch of chopped toasted walnuts or almonds. Garnish with a few chive snips or a small thyme leaf.

Cheese and garnish

If using pear or apple, core and thinly slice the fruit. Arrange the slices on a small plate; if desired, brush lightly with a few drops of lemon juice to prevent browning. These fresh fruit slices complement the wine’s fruity and round character.

Fruit pairing

Set glasses and plated accompaniments on the table. Keep the bottle in the ice bucket or nearby so it stays at the recommended temperature throughout the tasting.

Before each pour, gently swirl your glass to release aromas. Note the wine’s roundness and indulgent texture on the palate: look for flavors of ripe stone fruit, honeyed citrus, toasted nuts, and subtle oak or beurre notes. Allow the long finish to develop between sips.

Encourage guests to try a bite of the cheese or bread between sips to experience how the wine’s acidity and texture interact with the creamy, nutty accompaniments. Refresh bread, cheese, or fruit as needed and top up pours to about 120–150 ml per guest.

When finished, recap the bottle with the cork and return it to the ice bucket if there is remaining wine to maintain the serving temperature. Consume remaining wine within 2–3 days, keeping it chilled and upright.
