Prepare mushrooms

Preheat oven to 425°F (220°C) if you plan to roast finishing mushrooms. Clean mushrooms by brushing or wiping with a damp towel; trim stems and quarter larger caps so pieces are roughly uniform (about 3/4–1 inch).

Sauté aromatics

In a large skillet over medium heat, add olive oil and butter. When butter has melted and the fat shimmers, add minced garlic and chopped shallot. Sauté 1–2 minutes until fragrant and the shallot softens, taking care not to brown the garlic.

Cook mushrooms

Add the prepared cremini/button mushrooms to the skillet in a single layer if possible. Sprinkle 2 tsp salt, 1/2 tsp pepper, and the thyme leaves. Cook without stirring for 3–4 minutes to allow browning, then stir and continue cooking 4–6 minutes until mushrooms are nicely browned and tender and any released liquid has mostly evaporated. Taste and adjust seasoning with remaining salt and pepper.

For Gorgonzola topping (option A)

Make Gorgonzola sauce

Reduce heat to low. Crumble Gorgonzola into the pan with mushrooms (or remove mushrooms to a bowl and melt cheese in the skillet—either works). Add heavy cream and stir constantly until the cheese melts into a smooth, glossy sauce, about 2–3 minutes. If sauce is too thick, add 1 tsp water or cream at a time to reach desired consistency.

Finish and serve with Gorgonzola: Stir in chopped parsley and optional lemon zest. Spoon warm mushroom–Gorgonzola mixture onto toasted baguette slices or serve over mixed greens. Serve immediately.

For roasted mushroom finish (option B)

Roast additional mushrooms (if using wild mushrooms)

If using the mixed wild mushrooms for a roasted finish, toss them with 1 tbs olive oil (or a drizzle), 1/2 tsp salt, 1/4 tsp pepper and spread on a rimmed baking sheet. Roast in the preheated 425°F (220°C) oven for 10–14 minutes, stirring once halfway, until edges are caramelized.

Combine and finish

Return sautéed cremini to a warm serving pan. Add the roasted wild mushrooms (or if you skipped roasting, use the remaining mushrooms sautéed the same way) and drizzle balsamic vinegar over the mixture. Stir in chopped rosemary and fold in grated Parmesan if using. Adjust seasoning with remaining salt and pepper. Warm through 1 minute and remove from heat.

Serve: Spoon the roasted mushroom mixture onto toasted baguette slices or alongside mixed greens. Optionally drizzle a little extra-virgin olive oil or a tiny balsamic reduction over the top and serve immediately.
