Method
Potato Chips
Prep and slice potatoes
Wash and dry the potatoes. Using a mandoline or a very sharp knife, slice the potatoes as thinly and evenly as possible (about 1/16 inch / 1.5 mm). Place the slices in a large bowl of cold water as you work to remove excess starch.
Rinse and dry slices
Swirl the potato slices in the water, then drain and repeat until the water runs clear (2–3 rinses). Lay the slices on clean kitchen towels or paper towels and blot thoroughly until completely dry—this is crucial to avoid oil splatter and to get crisp chips.
Heat oil
In a heavy-bottomed saucepan or deep skillet, pour enough oil to reach about 1/2–1 inch up the sides (approximately 1 cup). Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a single slice: it should sizzle steadily but not brown immediately.
Fry chips
Working in small batches (about 10–12 slices per batch depending on pan size), carefully add potato slices in a single layer. Fry, stirring gently or turning slices with a spider, until golden and crisp, about 2–4 minutes depending on thickness. Remove with a slotted spoon or spider and transfer to a wire rack set over a sheet pan or to paper towels to drain. Immediately season with the 1 tsp fine sea salt and 1/4 tsp black pepper while still warm. Continue with remaining slices, keeping finished chips warm in a low (200°F/95°C) oven if desired.
Optional finish
If using melted butter, toss the warm chips lightly with 1 tsp melted unsalted butter for a silkier mouthfeel, then re-season to taste. Allow chips to cool slightly until crisp before plating with toppings.
Crème Fraîche Topping
Mix crème fraîche
In a small bowl, combine 1/2 cup crème fraîche with 1 tsp fresh lemon juice, 1/2 tsp lemon zest, 1 tbsp finely chopped chives, 1/4 tsp fine sea salt, and 1/8 tsp freshly ground pepper. Taste and adjust: it should be bright and slightly tangy but not overpowering. Keep chilled until ready to assemble.
Portioning
For individual bites, place about 1/2 to 3/4 teaspoon of the crème fraîche mixture on each chip (depending on chip size). Spoon gently so the chip doesn't break—use a small melon baller or teaspoon for control.
Caviar & Garnish
Chill and handle caviar
Keep the caviar chilled in its tin until the moment of serving. Use a non-metallic spoon (mother-of-pearl, bone, or plastic) to preserve the delicate flavor when scooping. Portion approximately 0.5 ounce (about 1 tablespoon) of Golden Osetra caviar for each 6–8 chips (adjust by appetite). For a small canapé, place about 1/4–1/2 teaspoon of caviar on top of the crème fraîche dollop.
Assemble canapés
Arrange the warm or room-temperature chips on a clean platter. Pipe or spoon the crème fraîche onto individual chips, then top each with the reserved portion of caviar. Garnish each canapé with a single tiny dill frond or a few microgreens if desired. Serve immediately so chips remain crisp.
Serving suggestion
Serve the caviar-topped chips with chilled vodka, Champagne or a crisp white wine, and additional lemon wedges on the side. Keep any leftover caviar refrigerated and consume within the recommended timeframe on the tin.
