Buttermilk Fried Chicken
Brine/Marinate
Pat the chicken pieces dry with paper towels. In a large bowl, whisk together buttermilk, 1 tsp kosher salt, 1/2 tsp black pepper, and hot sauce if using. Submerge the chicken in the buttermilk mixture, cover, and refrigerate for at least 4 hours or up to overnight to tenderize and flavor the meat.
Prepare Dredge
In a wide shallow dish, combine the all-purpose flour and cornstarch. Stir in smoked paprika, garlic powder, onion powder, ground cumin, 1/2 tsp ground turmeric, ground ginger, granulated sugar, baking powder, remaining 1 tsp kosher salt and remaining 1/2 tsp black pepper. Whisk to evenly distribute spices.
Make Wet Batter
In a separate bowl, beat the 2 eggs with 1/2 cup cold water until smooth. Remove each piece of chicken from the buttermilk, letting excess drip back into the bowl, then coat briefly in the flour mixture, dip into the egg mixture, and return to the flour for a second, thorough coating. Press the flour onto the surface so a thick, even crust forms. Place coated pieces on a wire rack and let rest 10–15 minutes to help the coating set.
Heat Oil
Pour neutral oil into a large heavy skillet or Dutch oven to a depth of about 1 to 1 1/4 inches (approximately 1 to 1.5 cups depending on pan). Heat oil over medium-high until it registers 325–350°F (160–177°C) on an instant-read thermometer. If you don't have a thermometer, test with a small pinch of flour—the oil should sizzle steadily but not smoke.
Fry Chicken
Work in batches without crowding the pan. Carefully add chicken, skin-side down if applicable. Maintain oil temperature between 300–325°F (149–163°C) for even cooking. Fry each batch 12–15 minutes, turning once halfway, until crust is deep golden and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Adjust heat as needed between batches and allow oil to return to temperature before adding more chicken.
Drain
Transfer cooked pieces to a wire rack set over a sheet pan to drain and stay crisp. Sprinkle lightly with coarse sea salt while still hot. Keep warm in a low oven (200°F / 95°C) if finishing multiple batches.
Golden Glaze
While the last batch of chicken is frying, make the glaze. In a small saucepan over low heat, melt the butter. Stir in honey, soy sauce, lemon juice, 1/4 tsp ground turmeric, grated ginger and 1/4 tsp salt. Warm gently until combined and glossy, about 1–2 minutes—do not boil. Taste and adjust: add a touch more lemon for brightness or more honey for sweetness.
When a batch of fried chicken is hot and drained, brush a light coat of the warm golden glaze over each piece, turning to glaze both sides. The glaze should create a thin, shiny golden coating without making the crust soggy. Serve glazed chicken immediately for optimal contrast of crisp crust and glossy glaze.
Finishing & Garnish
Leftovers: Store cooled chicken in an airtight container in the refrigerator up to 2 days. Reheat in a 350°F (175°C) oven on a wire rack for 8–10 minutes to crisp the crust; reheat glaze briefly and brush on if desired.
