Prepare Glass

Chill and absinthe rinse

Place a rocks or old-fashioned glass in the freezer or fill with ice water to chill while you build the cocktail. When ready to serve, discard the chilling ice/water. Pour the measured absinthe into the chilled glass. Swirl the absinthe around the bowl and walls so the interior is lightly coated, then pour out (or discard) any excess — you want a thin aromatic film, not a full pour.

Mix Cocktail

In a mixing glass, add the High West Double Rye and Dudognon Réserve Cognac.

Add the Peychaud's Bitters and the simple syrup to the spirits in the mixing glass.

Fill the mixing glass with large ice cubes (about 3 pieces). Stir gently and steadily for 20–30 seconds (roughly 15–20 full turns) until the mixture is well chilled and slightly diluted — the surface should be chilled and the glass cold to the touch.

Strain the stirred cocktail into the prepared absinthe-rinsed rocks glass. Traditionally the Sazerac is served neat (no ice), but you may add one large chilled cube if preferred.

Finish

Express the lemon peel over the glass: hold the peel with the outer (zest) side facing down and give it a quick squeeze above the drink so the oils spray onto the surface. Run the peel around the rim, then drop it into the glass as garnish (or discard, per preference).

Serve immediately. Sip slowly to appreciate the interplay of rye spice, cognac richness, Peychaud's bitters, and the absinthe aromatics.
