Into a medium mixing bowl add 1 cup ketchup, 3 tablespoons prepared horseradish, 2 tablespoons fresh lemon juice, 1 teaspoon Worcestershire sauce, and 1 teaspoon hot sauce. Use a rubber spatula or whisk to mix until smooth and uniformly colored.

Stir in 1 teaspoon smoked paprika, 1 teaspoon granulated sugar, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper. Taste and adjust: if too sweet, add another 1/2 teaspoon lemon juice; if too sharp, add 1/2 teaspoon sugar; if you want more heat, add the optional extra horseradish (1 teaspoon).
