Alaskan King Crab
Inspect and thaw (if frozen)
If the king crab legs are frozen, transfer them to the refrigerator for 8–12 hours prior to service. For a faster thaw, place sealed crab legs in a bowl of cold water for 30–60 minutes, changing water once if still icy. Pat dry with paper towels.
Prepare an ice bed
Fill a shallow serving platter or bowl with the 2 cups of ice to create a chilled bed for cold service. This keeps the crab at a safe, cold temperature and presents well on the raw bar.
Decide serving temperature
Alaskan king crab is traditionally served chilled (over ice) or warmed. Choose one method below and follow the related step. Both start here: arrange the crab legs on the ice bed or on a heat-safe platter if warming.
For chilled service (recommended for Raw Bar)
Cut any long sections to fit the platter with kitchen shears at the joint; keep shells intact for presentation. Place the crab legs on the bed of ice. Squeeze the 1/2 lemon over the crab lightly (reserve remaining lemon half for guests). Sprinkle the finely chopped parsley evenly. Place small ramekins of cocktail sauce and mustard-dill sauce on the platter if using. Serve chilled with cold unsalted butter on the side (if offering melted butter, see warming method).
For warmed service (optional)
Bring 4 cups of water to a gentle simmer in a large pot (do not boil). Reduce heat to low so water is just below simmer. Submerge the crab legs (in their shells) for 1–2 minutes to reheat — they are already cooked, so you only want to warm through without drying. Remove with tongs and transfer to a heat-safe platter. Meanwhile, melt the 2 tbs unsalted butter gently in a small saucepan until just melted; stir in a pinch of the sea salt and a grind of black pepper. Brush or drizzle melted butter over crab legs, squeeze remaining lemon over top, and sprinkle parsley. Serve immediately with extra melted butter and sauces on the side.
Seasoning and finishing
Whether chilled or warmed, finish with a light sprinkling of the 1/4 tsp coarse sea salt and the 1 tsp freshly ground black pepper (adjust to taste). If serving chilled, offer cold unsalted butter in a ramekin or melted butter warmed separately at the table.
Serving
Provide crab crackers or kitchen shears and small forks for guests. For a 3/4 lb portion per order, plate attractively with lemon half, a small dish of dipping sauce(s), and a garnish of parsley. If chilled, keep on ice until served; if warmed, serve immediately to preserve temperature and texture.
