Crab Cake Mixture

Prepare crab

Place the lump crab meat in a large bowl. Check for and remove any remaining shell pieces; handle gently so lumps remain intact.

Combine wet ingredients

In a small bowl whisk together 3 tablespoons mayonnaise, 1 teaspoon Dijon, 1 teaspoon Worcestershire sauce, 1 tablespoon lemon juice and the lightly beaten egg until smooth.

Mix aromatics and seasoning

Add the finely chopped parsley and green onion to the bowl with crab. Sprinkle in 1 teaspoon Old Bay, 1 teaspoon salt and 1 teaspoon black pepper. Gently fold to combine.

Add binder

Pour the mayonnaise/egg mixture over the crab and fold gently until evenly distributed. Add 3 tablespoons breadcrumbs and fold just until mixture holds together. Do not overmix — you want lumps of crab to remain.

Shaping & Coating

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. In a shallow dish place 1 cup extra breadcrumbs or panko. Using a 1/3-cup measure (or by hand), portion the crab mixture into 6 cakes. Gently form each portion into a compact patty about 1 to 1 1/2 inches thick.

Lightly press each patty into the breadcrumbs, coating both sides. Place the coated cakes on the prepared baking sheet, leaving space between them.

Brush the tops and sides of each cake with the melted butter and olive oil mixture (mix together the 2 tablespoons melted butter and 1 tablespoon olive oil). This helps create a golden crust when baking.

Bake

Bake in the preheated 400°F (200°C) oven for 12–15 minutes, until the cakes are heated through and edges are golden. For a crisper top, switch the oven to broil on high for the last 1–2 minutes, watching closely to avoid burning.

Remove from oven and let rest on the baking sheet for 2 minutes, then transfer to a serving plate. Serve warm with lemon wedges.

While the cakes bake, stir together 1 tablespoon mayonnaise, 1 teaspoon ketchup, 1 teaspoon Dijon mustard, and (if using) 1 teaspoon hot sauce and 1 teaspoon chopped capers. Taste and adjust seasoning. Serve a spoonful alongside each crab cake.
