Method

Prepare the Aioli

    Mix the Aioli Ingredients

    In a medium bowl, combine mayonnaise, ale, Dijon mustard, chopped fresh herbs, minced garlic, salt, and black pepper. Mix well until smooth and creamy. Set aside in the refrigerator to let flavors meld.

Cook the Bacon

    Fry the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Remove from skillet and place on paper towels to drain excess fat.

Prepare the Burger Patties

    Form and Cook the Patties

    Divide the ground beef into two equal portions and shape into patties. Season both sides with salt and pepper. In the same skillet used for the bacon, cook the patties over medium-high heat for about 4-5 minutes on one side, then flip.

    Add Cheese

    After flipping the patties, place a slice of sharp cheddar cheese on each patty. Cook for an additional 4-5 minutes or until cheese is melted and the burger is cooked to desired doneness.

Fry the Egg

    Soft Fry the Egg

    In a small non-stick skillet, add a little oil or butter and heat over medium-low. Crack the egg into the skillet and cook until the whites are set but the yolk is still runny, about 3-4 minutes. Season with salt and pepper.

Assemble the Burger

    Build the Burger

    To assemble, toast the burger buns lightly if desired. Spread a generous amount of the ale-mustard & herb aioli on the bottom bun. Layer with lettuce, the burger patty with melted cheese, crispy bacon, sliced pickles, shaved red onion, and finally, the fried egg. Top with the other half of the bun.
