Method

Fries Preparation

    Cut and Soak Potatoes

    Peel and cut the Russet potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry Potatoes

    Drain and pat dry the soaked potatoes. Fry them in batches until golden brown and crispy, about 5-7 minutes per batch.

    Season Fries

    Remove fries from the oil, and immediately sprinkle with salt, black pepper, and paprika. Toss to coat evenly.

Queso Sauce Preparation

    Melt the Cheeses

    In a saucepan over medium heat, combine Velveeta cheese, cream cheese, and milk. Stir until melted and smooth.

    Add Jalapeños and Cumin

    Stir in the diced jalapeños and ground cumin. Cook for an additional 2-3 minutes, stirring frequently.

Chicken Chorizo Preparation

    Cook Chorizo

    In a skillet over medium heat, cook the chicken chorizo until browned and fully cooked, about 5-6 minutes. Drain excess fat.

Smoked Chile Sauce Preparation

    Combine Sauce Ingredients

    In a bowl, mix smoked chile powder, tomato sauce, garlic powder, and onion powder until well combined.

Assembly

    Layer the Ingredients

    On a serving platter, layer the seasoned fries, followed by the cooked chicken chorizo, queso sauce, and smoked chile sauce.

    Add Toppings

    Top with shredded sharp cheddar cheese, pickled jalapeños, and chopped cilantro before serving.
