Method

Prepare the Mojo Vinaigrette

    Combine Ingredients

    In a medium bowl, whisk together olive oil, lime juice, minced garlic, cumin, salt, and pepper until well combined.

Prepare the Shrimp

    Prepare the Tempura Batter

    In a bowl, mix tempura batter mix with water until smooth.

    Heat the Oil

    In a deep pan, heat oil over medium-high heat until hot.

    Batter the Shrimp

    Dip each shrimp into the tempura batter, ensuring they are fully coated.

    Fry the Shrimp

    Carefully place the battered shrimp into the hot oil, frying in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Tacos

    Warm the Tortillas

    Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side.
