Prepare Roasted Poblano

Roast the Poblano
Preheat your grill or oven to high heat. Place the poblano pepper directly on the grill grates or on a baking sheet in the oven. Roast until the skin is charred and blistered, turning occasionally, about 10-15 minutes. Once roasted, remove from heat and place in a bowl covered with plastic wrap to steam for about 10 minutes.

Peel and Slice
After steaming, carefully peel off the charred skin of the poblano. Cut it open, remove the seeds, and slice it into strips.
Assemble the Sandwich

Prepare Cheese Mixture
In a mixing bowl, combine the sharp cheddar cheese, muenster cheese, and chihuahua cheese. Mix well to ensure even distribution.

Butter the Bread
Spread the unsalted butter on one side of each slice of brioche bread.

Layer the Ingredients
On the unbuttered side of two slices of brioche bread, layer the cheese mixture evenly. Add the roasted poblano strips on top of the cheese mixture. Place the remaining slices of bread on top, buttered side up.
Grill the Sandwich

Grill Until Golden
Cook the sandwiches for about 3-4 minutes on one side, or until the bread is golden brown and crispy. Carefully flip the sandwiches and cook for another 3-4 minutes on the other side, ensuring the cheese is melted.

Remove the sandwiches from the skillet, slice them in half, and serve immediately while hot and cheesy.
