Method

Fries

    Wash and scrub the russet potatoes thoroughly under cold water. Peel them if desired, then cut them into even strips (about 1/4 inch thick) to ensure uniform cooking.

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

    After soaking, drain the water and pat the potatoes dry using a clean kitchen towel or paper towels to remove moisture.

    In a large, deep pot or a deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the right temperature.
