Preparing the Beef Patties

Form the Patties
Divide the seasoned beef into four equal portions (3 oz each). Roll each portion into a ball without overworking the meat.
Cooking the Patties

Heat the Pan
Preheat a cast-iron skillet or non-stick pan over medium-high heat for about 5 minutes until hot.

Sear the Patties
Place the meatballs onto the hot skillet, and immediately smash each ball down with a spatula to form a thin patty. Cook for about 3-4 minutes on one side.

Flip and Finish
Once a crust forms on the bottom, flip the patties and cook for an additional 2-3 minutes until the internal temperature reaches 160°F (71°C). If using cheese, place a slice on each patty during the last minute of cooking to melt.
Toasting the Buns

Butter the Buns
Spread 1 tbsp of unsalted butter on the cut sides of each brioche bun.

Toast the Buns
In the same skillet used for the patties, place the buttered buns, cut side down, and toast for 1-2 minutes until golden brown.
