Chardonnay grapes aged in French oak barrels, wild fermented with Sidereal Labs yeast.

Begin by harvesting 100 kg of ripe Chardonnay grapes. Ensure they are hand-picked to avoid bruising and maintain quality.

Harvesting

Once harvested, crush the grapes using a grape crusher. Aim to break the skins without completely pulverizing the seeds.

Crushing

Add 10 g of Sidereal Labs yeast to the crushed grapes in a fermentation vessel. Ensure the grape must is at the ideal temperature for fermentation (around 18-22°C).

Inoculation

Allow the must to ferment naturally for 2-4 weeks. Monitor the fermentation process for temperature and specific gravity.

Fermentation

After fermentation is complete, transfer the wine into 5 French oak barrels for aging. Ensure to leave some space in each barrel for expansion.

Transfer to Barrel

Aging should occur for at least 6 months, checking periodically for flavor development and barrel condition.
