Preparation

1. Prepare the Pears

Wash and core the pears, then chop them into small pieces. Measure out 10 cups of chopped pears.

2. Prepare the Sugar and Acid Mixture

In a separate bowl, mix the granulated sugar and citric acid together until well combined.

Fermentation

3. Combine Ingredients

In a large fermentation vessel, add the chopped pears and pour in the 4 liters of water. Stir in the sugar and citric acid mixture until dissolved.

4. Add Yeast

Sprinkle the wine yeast over the mixture in the fermentation vessel. Do not stir it in; simply let it sit on top for a few minutes.

5. Cover and Ferment

Cover the fermentation vessel with a clean cloth and secure it with a rubber band. Allow the mixture to ferment at room temperature for about 1 to 2 weeks, stirring daily.

Bottling

6. Strain the Mixture

After fermentation is complete, strain the mixture through a fine mesh sieve or cheesecloth into a clean container, discarding the solid pear pieces.

7. Bottle the Wine

Transfer the strained liquid into sanitized bottles, leaving some space at the top. Seal the bottles with corks or caps.

Aging

8. Age the Wine

Store the bottled wine in a cool, dark place to age for at least 3 to 6 months for best flavor.
