Preparation
Prepare the Pears
Wash the pears thoroughly under running water. Remove the stems and cut each pear into quarters, removing the seeds.
Cook the Pears
In a large pot, combine the quartered pears and water. Bring to a boil over high heat, then reduce the heat to medium-low. Simmer the pears for about 30 minutes, until they are soft.
Blending
Blend the Pear Mixture
Using a blender or immersion blender, puree the cooked pears and water until smooth. If using a blender, you may need to do this in batches.
Straining
Strain the Mixture
Place a fine-mesh strainer or cheesecloth over a large bowl. Pour the pear puree into the strainer and let it drain for about 15-20 minutes, allowing the juice to separate from the pulp.
Mixing
Simmer the Mixture
Place the pot over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for about 10 minutes, stirring occasionally.
Finalizing
Cool and Carbonate
Remove the pot from heat and let the mixture cool completely. Once cooled, stir in the sparkling water and taste. Adjust sweetness or acidity if needed.
