Wash the wild blueberries thoroughly under cold water. Remove any stems or leaves.

Prepare the Blueberries

In a medium saucepan, combine the washed blueberries, granulated sugar, and water. Heat over medium heat until the sugar dissolves and the blueberries begin to burst, about 10 minutes. Stir occasionally.

Make Blueberry Syrup

Once the blueberries have burst and the mixture is syrupy, remove from heat and stir in the lemon juice. Allow the mixture to cool.

After cooling, strain the blueberry mixture through a fine mesh sieve into a bowl, pressing down to extract as much liquid as possible. Discard the solids.

Stir the yeast into the strained blueberry liquid. Cover the bowl with a clean cloth and let it sit at room temperature for 24 hours.

Allow the bottles to ferment in a cool, dark place for about 1 to 2 weeks. Check the bottles every few days for pressure buildup.

Once fermentation is complete, carefully open the bottles to release any built-up gas. Pour the blueberry wine into glasses, filling them halfway.

Prepare for Serving

Top each glass with sparkling water to taste, and gently stir to combine.
