Dry shake (if using egg white)
Add Hendrick's Gin, Amaro Montenegro, Chambord, fresh lemon juice, ginger syrup, and egg white (if using) into a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to emulsify and create a silky foam.
Wet shake
Add a large handful of ice to the shaker, reseal, and shake hard for 12–15 seconds until the shaker is very cold to the touch and well chilled (this both chills and dilutes to proper balance).
Strain
Discard ice from the glass. Double-strain the cocktail into the chilled coupe using both the shaker strainer and a fine mesh strainer to achieve a smooth texture and remove any small ice shards or raspberry seeds.
Finish with bitters
Carefully place 2 dashes of Angostura or aromatic bitters onto the foam. If desired, use a toothpick to create a simple decorative pattern (a small heart or swirl) by dragging the bitters slightly.
Garnish & Serve
Skewer 2–3 fresh raspberries on a small cocktail pick and rest across the rim or float them atop the foam. Add a thin lemon wheel or twist on the rim for brightness. Serve immediately.
