Method
Flourless Chocolate Torte (base)

Prepare pan
Preheat oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment and butter the sides; dust lightly with cocoa powder. Place a rimmed baking sheet under the pan to catch any drips.

Melt chocolate and butter
In a heatproof bowl set over simmering water (double boiler) or in short bursts in the microwave, melt the 10 oz chopped bittersweet chocolate with the 8 oz cubed butter, stirring until smooth. Remove from heat and let cool slightly.

Bake
Pour batter into prepared pan, smooth top, and bake 25–30 minutes until a thin crust forms and center is just set (a toothpick will come out with moist crumbs). Do not overbake. Cool completely on a wire rack, then remove from pan and place on a cake board. Chill at least 1 hour (better if overnight) before assembly.
Dark Chocolate Mousse

Make chocolate base
Place 8 oz dark chocolate in a heatproof bowl. Heat 1 cup heavy cream to just under a simmer and pour over chocolate. Let sit 2 minutes, then stir until completely smooth to form a ganache. Cool to room temperature but still pourable.

Whip cream
Whip 1.5 cups heavy cream with 1 tbs sugar and 1/2 tsp vanilla to soft-medium peaks.

Fold
Fold one-quarter of the whipped cream into the cooled ganache to loosen it, then gently fold in the remaining whipped cream until homogeneous and light. Chill briefly (15–20 minutes) to firm slightly for easier spreading.
Espresso Mousse

Bloom gelatin and dissolve espresso
Sprinkle 1 tsp gelatin over 1 tbsp cold water; let sit 5 minutes. Stir 1 tbsp hot water into 1 tbsp espresso (or dissolve instant) so espresso is hot. Warm the bloomed gelatin gently until dissolved and stir into the hot espresso to combine.

Melt white chocolate
Place 6 oz white chocolate in a bowl. Pour the hot espresso-gelatin mixture over the white chocolate and let sit 1–2 minutes; stir until smooth and fully combined. If mixture is too thick, add a teaspoon of hot water to loosen.

Whip cream and fold
Whip 1.25 cups heavy cream with 1 tbs sugar to soft peaks. Fold one-third of whipped cream into the white chocolate mixture to loosen, then fold in remaining cream until smooth. Chill until stable but still spreadable (20–30 minutes).
Zephyr Whipped Ganache

Bloom gelatin
Sprinkle 1/2 tsp gelatin over 1 tbsp cold water; let bloom 5 minutes, then warm gently to dissolve.

Make ganache and aerate
Heat 3/4 cup heavy cream to a simmer, pour over 6 oz white chocolate and let sit 1–2 minutes, then stir until smooth. Whisk in dissolved gelatin and 1/2 tsp vanilla. Cool to room temperature, then chill until thickened but not set. Whip the ganache briefly with a hand mixer to incorporate air until light and fluffy — this creates the zephyr (marshmallow-like) texture. Keep chilled until assembly.
Mirror Glaze

Bloom gelatin
Sprinkle 2 tsp gelatin over 1/4 cup cold water; let sit 5–10 minutes.

Make glaze
In a small saucepan, combine 1 cup sugar, 1/2 cup water, and 1/4 cup sifted cocoa powder. Bring to a gentle boil, stirring, until sugar dissolves. Remove from heat and whisk in 3/4 cup sweetened condensed milk. Add the chopped 10 oz white chocolate and let sit 2 minutes, then whisk until smooth. Stir the dissolved gelatin into the hot mixture until fully incorporated. Strain the glaze into a bowl to remove lumps and allow to cool to 90–95°F (32–35°C) before use (warm but not hot).
Florentine (crunch garnish)

Make florentine batter
Preheat oven to 350°F (175°C) and line a baking sheet with silicone or parchment. In a small saucepan, melt 2 tbs butter with 1/2 cup sugar and 1 tbs honey until sugar dissolves; remove from heat and stir in 1 tsp flour. Fold in 1 cup sliced almonds until evenly coated.

Bake and shape
Drop tablespoon-sized mounds onto prepared sheet spaced well. Bake 6–8 minutes until edges are deep golden. Remove from oven and while still warm and pliable, transfer to an inverted rolling pin or bottle to drape and form a curved florentine shape. Let cool to crisp. If needed, brush very lightly with 1 tsp cream to help browning before baking.
Candied Hazelnuts

Candy hazelnuts
Line a baking sheet with parchment. In a saucepan, combine 3/4 cup sugar and 2 tbs water; cook over medium heat without stirring until sugar melts and turns an amber caramel. Remove from heat and quickly stir in toasted hazelnuts and 1/4 tsp salt to coat. Spread on prepared sheet and separate with forks. Let cool completely, then chop roughly if desired.
Espresso Caramel

Make caramel
In a heavy-bottomed saucepan, combine 3/4 cup sugar and 2 tbs water. Cook over medium heat without stirring until sugar melts and turns a deep amber. Carefully whisk in 1/4 cup warmed heavy cream (mixture will steam and bubble). Stir in 1 tbsp butter, 1 tsp instant espresso powder, and 1/8 tsp salt until smooth. Cool to room temperature; keep at pourable consistency (rewarm gently if it thickens).
Assembly & Finishing

Layering
Place chilled flourless torte on a wire rack over a tray. Spread a 1/2–3/4-inch layer of dark chocolate mousse evenly over the top and sides if desired for coating. Chill 15 minutes to set. Pipe or spread a 1/2–3/4-inch ring of espresso mousse around the outer ring or as desired for decoration, leaving center visible for glaze or additional mousse layering. Smooth surfaces and chill until firm (30 minutes).

Apply zephyr ganache accents
Pipe small quenelles or rosettes of the zephyr whipped ganache onto the cake where you want soft white accents; chill briefly (10 minutes).

Glaze
Place the cake on a rack above a tray. Pour the prepared mirror glaze, cooled to 90–95°F (32–35°C), evenly over the top so it runs down the sides, covering the exposed surfaces. Use a spatula to gently coax glaze to cover any gaps. Allow excess to drip off and set for 5–10 minutes.

Garnish and final touches
Arrange florentine pieces and candied hazelnuts on top. Drizzle espresso caramel in thin streams over the cake and onto the board for decoration. Sprinkle cocoa nibs sparingly and dust a little cocoa powder if desired. Refrigerate the finished torte until serving (at least 30 minutes) so layers set; remove 15 minutes before serving to allow flavors to bloom.

Keep refrigerated up to 4 days. Bring to room temperature for 15–30 minutes before serving for best texture.
