    Prep

    Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with foil and set a wire rack on top. Pat the chicken wings dry with paper towels — removing excess moisture is essential for crisp skin.

    Place the dried wings in a large mixing bowl. Sprinkle with kosher salt and black pepper and toss to distribute evenly.

Marinade / Dry Rub

    Make Rub

    In a small bowl whisk together olive oil, smoked paprika, cayenne, chili powder, garlic powder, onion powder, brown sugar and cumin until smooth and paste-like.

    Pour the rub over the seasoned wings. Using your hands or tongs, toss thoroughly so each wing is evenly coated. For best flavor, cover and refrigerate for 30 minutes to 4 hours. If short on time, proceed immediately.

    Arrange the coated wings in a single layer on the wire rack, skin-side up, leaving space between pieces for air circulation.

Roasting & Crisping

    Place the baking sheet on the middle oven rack and roast for 25 minutes at 425°F (220°C). After 25 minutes, flip each wing and continue roasting for another 10–15 minutes until internal temperature reaches 165°F (74°C) and skin is deeply browned and crisp.

    For extra crispness, switch oven to broil for 2–3 minutes, watching carefully to avoid burning. Remove from oven when nicely charred in spots and juices run clear.

    While wings roast, make the glaze: in a small saucepan over low heat melt the butter. Add hot sauce, honey, apple cider vinegar and a pinch of salt. Stir until combined and slightly thickened, about 2–3 minutes. Keep warm.

    When wings come out of the oven, place them in a large bowl. Pour the warm glaze over the wings and toss gently to coat each piece evenly. Return glazed wings to the rack for 2–3 minutes in the hot oven (or under the broiler for 30–45 seconds) to set the glaze, if desired.
