Beef Patties

    Form patties

    Divide the 1 lb ground beef into two equal portions (about 8 oz / 225 g each). Gently form each portion into a round patty about 3/4-inch thick and slightly wider than your bun. Do not overwork the meat — handle just until it holds together. Make a shallow dimple in the center of each patty with your thumb to help it cook evenly.

    Season patties

    Season both sides of each patty generously with kosher salt (about 1/2 tsp per side total) and freshly ground black pepper. If using Worcestershire sauce, brush or sprinkle about 1/2 tsp onto each patty and lightly press it in.

    Cook to medium-rare

    Heat a heavy skillet or cast-iron pan over medium-high heat for 3–4 minutes until hot. Add 1 tbsp neutral oil and swirl to coat. Place the patties in the pan leaving space between them. Cook undisturbed for 3 minutes to develop a brown crust. Flip the patties and cook for an additional 2–3 minutes for medium-rare (internal temperature about 130–135°F / 54–57°C). If adding cheese, place a slice on each patty during the last 30–60 seconds of cooking and cover the pan briefly to melt.

    Rest

    Transfer patties to a plate and let rest for 3–5 minutes. Resting lets juices redistribute and avoids an overly runny burger when bitten.

Sauce

    While the patties rest, combine 2 tbsp mayonnaise, 1 tbsp ketchup, 1 tsp mustard and 1/2 tsp pickle brine or finely chopped pickle in a small bowl. Stir until smooth and adjust seasoning to taste. Set aside.

Buns & Assembly

    Toast buns

    Butter the cut sides of the buns with about 1 tbsp softened butter total (about 1/2 tbsp per two cut halves). Return the skillet to medium heat or use a separate pan and toast the buns cut-side down until golden and lightly crisp, about 1–2 minutes. Remove from heat.

    Assemble burgers

    Spread the prepared sauce on the bottom bun. Place a lettuce leaf on the sauce (this creates a moisture barrier), then add the cheesy beef patty. Top with 2 slices of tomato, 2 rings of red onion, and 3 pickle slices. Spread a little sauce on the top bun if desired and close the burger. Repeat for the second burger.

Serving

    Serve immediately while warm. If desired, accompany with fries or a simple salad. Leftover patties can be refrigerated for up to 2 days; reheat gently to avoid overcooking.
