Preparation

Mashing

1. Prepare the Mash

In a large pot, combine the Pilsner Malt, Wheat Malt, and Carapils Malt with 4 liters of filtered water. Heat the mixture to 66°C (150°F) and hold for 60 minutes, stirring occasionally.

2. Sparge the Grains

After the mash is complete, sparge the grains with an additional 1 liter of hot water (about 76°C or 170°F) to extract as much sugar as possible. Collect the wort in a brew kettle.

Boiling

3. Boil the Wort

Bring the collected wort to a boil. Once boiling, add the Hallertau Hops and boil for 60 minutes.

4. Add Coriander and Orange Peel

With 5 minutes left in the boil, add the coriander seeds and orange peel to the wort.

Cooling and Fermentation

5. Cool the Wort

After the boil, cool the wort quickly using a wort chiller or by placing the pot in an ice bath until it reaches around 20°C (68°F).

6. Pitch the Yeast

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Wheat Beer Yeast on top of the wort and seal with an airlock.

7. Ferment

Allow the beer to ferment at a temperature of 18-22°C (65-72°F) for about 1-2 weeks, or until fermentation activity has ceased.

Bottling

8. Bottle the Beer

Once fermentation is complete, siphon the beer into sanitized bottles, leaving about an inch of headspace. Cap the bottles.

9. Carbonate

Allow the bottles to carbonate at room temperature for about 1-2 weeks.
