Prep & chill
Chill caviar
Keep the unopened caviar tin refrigerated until ready to serve. For an attractive service, prepare a shallow bowl or platter with crushed ice and a smaller bowl or plate that will sit on top of the ice to hold the caviar tin or serving dish. Remove caviar from refrigerator just before plating; keep the tin closed until service begins to preserve flavor.
Prepare accompaniments
If making hard‑boiled eggs now: place eggs in a pot, cover with cold water, bring to a boil, then remove from heat and let sit covered 9 minutes. Transfer to an ice bath, peel, separate yolks from whites. Crumble yolks finely and dice whites small. Finely chop red onion and chives; drain capers. Measure out crème fraîche into a small chilled bowl.
Warm and finish breads/blini
Warm blini and toasts just before serving so they are tender and fragrant. Heat a nonstick skillet over medium‑low heat, add 1–2 tsp neutral oil and warm blini 30–45 seconds per side until just heated through (do not brown heavily). Alternatively, warm blini briefly in a 300°F / 150°C oven for 4–6 minutes. Lightly butter brioche or melba toast rounds with softened unsalted butter and warm in the same skillet or oven for 2–3 minutes until butter is just melted and edges are warm.
Assemble service items
Place crushed ice in the prepared shallow bowl or platter. Set a smaller chilled bowl, ramekin, or the caviar tin (if attractive) on the ice. Spoon the caviar into the serving vessel if not serving directly from the tin; use a nonmetallic spoon (mother‑of‑pearl, bone, or gold‑plated recommended) to avoid metallic taste. Keep the caviar chilled on the ice.
Arrange warmed blini and buttered toasts on a serving platter. Place small bowls or spoons of accompaniments — crème fraîche, finely chopped red onion, chives, crumbled egg yolks, diced egg whites, and capers — around the caviar. Add lemon wedges and dill sprigs for garnish.
Service & plating
Explain to guests how to serve: use a small nonmetallic spoon to place a small amount (about 1/2 tsp to 1 tsp) of caviar onto a blini or toast, add a touch of crème fraîche and any combination of onion, chive, egg yolk, egg white, or caper, and finish with a tiny squeeze of lemon if desired. Recommend tasting a small piece of caviar plain first to appreciate its flavor before adding accompaniments.
Replenish ice as needed to keep the caviar chilled during service. Leftover caviar: return unused caviar to its tin, cover, keep refrigerated and consume within 48 hours for best quality.
