Method
Belgian Waffle Batter
Preheat and prepare
Preheat your Belgian waffle iron according to manufacturer instructions. Lightly brush both plates with neutral oil or spray just before cooking.
Mix dry ingredients
In a large bowl whisk together 2 cups all-purpose flour, 2 tbsp granulated sugar, 1 tbsp baking powder, and 1 tsp fine salt until evenly combined.
Mix wet ingredients
In a separate bowl whisk 2 large eggs until combined, then add 1 1/2 cups whole milk, 6 tbsp melted and slightly cooled unsalted butter, and 1 tsp vanilla extract. Whisk until smooth.
Combine batter
Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; a few small lumps are fine. Let batter rest 5 minutes to hydrate the flour and allow baking powder to start working.
Cook waffles
Spoon or pour batter onto the preheated waffle iron (amount depends on iron size — about 3/4 to 1 cup per standard Belgian pocket). Close lid and cook until waffles are golden-brown and crisp, about 3–5 minutes per waffle or according to your iron. Remove to a wire rack in a warm (200°F/95°C) oven to keep crisp while you finish cooking remaining waffles. Repeat until batter is used (makes about 6 standard waffles).
Chocolate-Drizzle Sauce
Put 3 oz semisweet chocolate chips in a heatproof bowl. Heat 3 tbsp heavy cream in a small saucepan over medium heat until it just begins to steam and small bubbles form at the edge (do not boil). Pour the hot cream over the chocolate and let sit 1 minute. Add 1 tsp unsalted butter and 1 tsp light corn syrup (optional), then whisk until smooth and glossy. Keep warm over a barely-on simmer or transfer to a small insulated container; if it thickens, stir in 1–2 tsp extra warm cream to loosen.
Berry Compote
Combine 2 cups mixed berries, 2 tbsp granulated sugar, 1 tbsp fresh lemon juice, and 2 tbsp water in a small saucepan over medium heat. Stir and bring to a gentle simmer, crushing some berries with the back of a spoon to release juices. Simmer 4–6 minutes until syrup is slightly thickened but berries still have some shape. Taste and adjust sugar or lemon if needed. Remove from heat and keep warm.
Browned-Butter Maple Syrup
In a small skillet over medium heat melt 2 tbsp unsalted butter. Continue cooking, swirling the pan occasionally, until the butter foams and the milk solids turn golden-brown and smell nutty, about 2–3 minutes. Immediately remove from heat and carefully stir in 1/2 cup pure maple syrup and a pinch of salt. Return to low heat briefly just to warm through; do not boil. Keep warm until serving.
Whipped Mascarpone
In a chilled bowl combine 3 oz mascarpone, 3 tbsp heavy cream, 1 tbsp powdered sugar, and 1/4 tsp vanilla extract. Whip with a whisk or hand mixer until smooth and slightly billowy — thick enough to dollop but soft enough to spread, about 30–60 seconds. Refrigerate until ready to serve; if it becomes too stiff, whisk in 1 tsp cream to loosen.
Assembly & Garnish
Top one waffle with a generous dollop of whipped mascarpone and a drizzle of chocolate sauce. Top another waffle with warm berry compote and a light dusting of confectioners' sugar. For a third variation combine a little mascarpone, a few berries, and a final drizzle of browned-butter maple syrup. Garnish each portion with a fresh mint leaf.
Serve immediately while waffles are crisp and sauces warm. Offer extra chocolate sauce, berry compote, and maple syrup at the table so guests can customize their 'flight.'
