Make the sugar syrup

Combine granulated sugar, water and light corn syrup in a medium saucepan. Stir gently to moisten the sugar before heating.

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to dissolve the sugar. Do not boil vigorously. Once the sugar is fully dissolved (about 3–5 minutes), reduce heat to low.

Skim any foam if it appears. Add kosher salt and continue to simmer on low for 2 minutes to slightly concentrate and round the flavor, then remove from heat.

Stir in pure vanilla extract. Let the syrup cool to room temperature (about 20–30 minutes) before proceeding. Cooling helps when adding fruit purées or extracts so they retain brightness.

Flavoring & Color (choose or combine)

Prepare fruit purées (if using fresh fruit)

If using fresh strawberries, raspberries, or blueberries: hull/trim fruit and blitz in a blender until smooth. Strain through a fine mesh sieve to remove seeds for a silky syrup (optional). Measure 1/2 cup purée for each flavor chosen.

Create flavored syrups

Divide the cooled basic syrup into separate small bowls or containers according to how many flavors you want (example: divide into 4 equal portions if making 4 flavors). For each portion: stir in the chosen flavoring component — e.g., 1/2 cup strawberry purée and 1–2 tsp sugar if needed, or 2 tbsp grenadine, or 1 tbsp lemon juice plus lemon zest for lemonade. Adjust to taste. If using concentrated extracts, add 1/4–1/2 tsp at first and taste before adding more.

If desired, tint each flavored syrup with a drop of food coloring to achieve bright, classic sno-cone hues (start with a very small amount and add until desired color is reached).

Taste each flavored syrup and adjust sweetness or acidity: add up to 1 tbsp water if too intense, or up to 1–2 tbs granulated sugar warmed into the portion if it needs more sweetness. For brighter citrus flavors, add an extra 1/2–1 tsp lemon juice.

Chill flavored syrups in the refrigerator until ready to serve (about 30 minutes) or keep at room temperature for immediate use.

Prepare ice

If you have a snow cone/shaved ice machine, shave the ice according to the manufacturer's instructions. Alternatively, crush ice finely in a blender or place ice cubes in a heavy resealable bag and pound with a rolling pin until very fine and fluffy.

Fill each sno-cone cup generously with shaved/crushed ice, mounding it above the rim for the classic look.

Spoon or drizzle flavored syrups over the packed ice. Start with 2–3 tablespoons of syrup per sno-cone and add more to taste. For layered or rainbow cones, apply one color at a time and rotate the cup as you pour to distribute colors evenly.

Garnish with a cherry, fresh fruit slice, or a small sprig of mint if desired. Serve immediately with a straw or spoon.

Store any leftover syrup refrigerated in airtight jars for up to 2 weeks. Shake before using because natural fruit purées can settle.
