Make raspberry puree

Place 1 cup fresh raspberries, 2 tbsp granulated sugar, and 1 tsp lemon juice in a blender or food processor. Pulse until mostly smooth with a few seeds remaining. Strain through a fine-mesh sieve into a bowl, pressing with a spoon to extract about 3/4 cup of puree; discard seeds.

Prepare mascarpone cream

In a medium bowl, whisk 4 oz mascarpone briefly to loosen. In a separate chilled bowl, whip 1 cup heavy cream to soft peaks. Gradually add 2 tbsp powdered sugar and 1 tsp vanilla extract while whipping to medium-stiff peaks. Fold the whipped cream gently into the mascarpone until smooth, then fold in about 1/2 cup of the raspberry puree (reserve roughly 1/4 cup for swirls/topping) until just marbled and evenly tinted.

Toasted Marshmallow Fluff

Spoon the 3 oz marshmallow fluff into a small heatproof bowl. If you have a kitchen torch: brush a little water on the surface of the fluff edge (prevents excessive burning) and use the torch to carefully toast the surface until golden and slightly caramelized, rotating the bowl to toast evenly (about 20–40 seconds). If you don't have a torch: place the bowl under a very hot broiler for 20–40 seconds, watching constantly to avoid burning.

Chocolate Sauce

Place 2 oz semisweet chocolate chips and 2 tbsp heavy cream in a small microwave-safe bowl. Microwave in 15-second intervals, stirring between each, until chocolate is melted and smooth (about 30–45 seconds total). Stir in 1 tsp unsalted butter until glossy. Allow to cool slightly; sauce will thicken as it cools.

Graham Cracker Crumble

Place graham crackers in a food processor and pulse to fine crumbs (about 3/4 cup). Alternatively, place in a sealed bag and crush with a rolling pin. Transfer crumbs to a small bowl and stir in 2 tbsp melted butter, 1 tbsp light brown sugar, and a pinch of salt until evenly moistened. For a slightly toasted flavor, spread crumbs on a baking sheet and toast in a 350°F (175°C) oven for 6–8 minutes; cool before assembling.

Assembly

Divide the graham cracker crumble among 4 serving glasses or bowls (about 2–3 tbsp crumble each) as a base.

Spoon or pipe the raspberry-mascarpone cream over the crumbs, filling each glass about three-quarters full. Reserve a small spoonful of plain whipped mascarpone if desired for topping.

Using the reserved 1/4 cup raspberry puree, drizzle a teaspoon or two over each portion and use a skewer to create a few gentle swirls in the cream for a marbled look.

Spoon a small dollop (about 3/4 tsp) of toasted marshmallow fluff onto each serving. If your torch is still available, you can briefly torch the tops again for extra caramelization (watch closely).

Drizzle 1/2 to 1 tsp of warm chocolate sauce over each serving, letting some sauce run down the sides for visual contrast.

Finish with a few extra fresh raspberries and a mint leaf on each glass.

Serving and Storage

Serve immediately so the toasted fluff remains slightly crisp on top. Alternatively, refrigerate up to 4 hours; if stored, add toasted fluff and chocolate sauce just before serving to preserve texture.
