Heat a medium skillet over medium heat and add olive oil. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until soft and translucent, about 6–8 minutes.

Stir in brown sugar and continue to cook 2–3 minutes until onions begin to caramelize. Add apple cider vinegar, soy sauce, and water, scraping up browned bits. Reduce heat to low and simmer until mixture is jammy, about 4–6 minutes. Remove from heat and set aside.

Form patties

Place ground beef in a bowl. Add kosher salt, black pepper, garlic powder and Worcestershire sauce. Gently combine with your hands or a spoon until just mixed—do not overwork. Divide into 8 equal portions (about 2 oz each) and lightly form into small, slightly flattened patties that are slightly larger than the buns to account for shrinkage.

Cook patties

Heat a large cast-iron skillet or griddle over medium-high heat. Add the butter and let it foam. Place patties in the hot skillet with space between them. Cook until well-browned on the first side, about 2–3 minutes, then flip. Immediately top each patty with a small piece of cheddar so it melts as the second side cooks, about 1–2 more minutes for medium. Internal temp should reach 160°F (71°C) for well-done. Remove patties to a warm plate and tent with foil.

Buns & Assembly

Toast buns

Split slider buns and lightly butter cut sides if desired. Place cut sides down in the skillet or on a griddle over medium heat until golden and slightly crisp, about 1 minute. Remove and place bottoms on a platter.

Sauce

In a small bowl mix mayonnaise and mustard until smooth. Spread about 1 teaspoon of the mixture on each bottom bun.

Assemble sliders

Place a lettuce leaf (if using) and a patty on each bottom bun. Top each patty with a spoonful of onion jam and a dill pickle slice. Add a thin tomato slice if desired. Spread a little sauce on the top bun and press to close.

Serve

Arrange sliders on a platter and serve immediately while hot. Offer extra hot sauce at the table if desired.
