Prepare jackfruit

Drain and rinse the canned young jackfruit. Pat dry with paper towels. Using your fingers or two forks, pull apart the jackfruit pieces so they form shredded, pulled-like strands and small chunks (about 2 cups once shredded). Trim out any tough core pieces if present.

Sauté aromatics

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the finely chopped onion and cook, stirring occasionally, until translucent and beginning to brown, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

Spice and build sauce

Add the smoked paprika, ground cumin, and brown sugar to the skillet. Stir to coat the onions and garlic and toast the spices for 30 seconds. Stir in the tomato paste and cook 30–45 seconds to remove raw tang.

Cook jackfruit

Add the shredded jackfruit to the skillet and toss to combine with the aromatics and spices. Pour in the vegetable broth, soy sauce, and apple cider vinegar. Stir, reduce heat to a gentle simmer, and cook uncovered for 10–12 minutes, stirring occasionally, until most of the liquid has evaporated and the jackfruit is tender and infused with flavor.

Finish seasoning

Season the mixture with salt and black pepper. Taste and adjust: add a pinch more salt, 1/2 teaspoon sugar, or additional vinegar for brightness if needed. Remove from heat and set aside.

Assembly & Cooking

Prepare bread

Spread vegan mayonnaise or softened butter on one side of each bread slice (these will be the outsides). If using Dijon mustard, spread a thin layer on the unbuttered side of four slices (the interior side).

Assemble melts

Divide the warm jackfruit filling evenly among four bread slices (on the unbuttered/unbuttered+mustard side). Top each with about 1/4 cup vegan shredded cheese or one vegan cheese slice (adjust to preference). Place the remaining bread slices on top, buttered side out, to form four sandwiches.

Cook sandwiches

Heat a large skillet or griddle over medium-low to medium heat. Place sandwiches in the skillet (work in batches if needed). Cook 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crisp and the cheese is melted. If the bread is browning too quickly before cheese melts, lower the heat and cover the skillet for 1–2 minutes to trap heat and help melt the cheese.

Serve

Transfer sandwiches to a cutting board and let rest 1 minute. Slice each sandwich in half diagonally. Garnish with chopped parsley if using. Serve immediately with pickles, coleslaw, or a simple green salad.
