Prepare bread and spread
Bring bread to room temperature if refrigerated. On the outside of each bread slice, spread about 1 tablespoon of unsalted butter evenly to coat the entire face. On the inside face of one slice, spread 1 teaspoon mayonnaise and the Dijon mustard evenly; this adds flavor and helps browning. Sprinkle half of the garlic powder (about 1/8 tsp) and a pinch of black pepper onto the mayo-mustard layer.
Assemble cheese layers
On the inside face of the other buttered bread slice, pile the grated sharp cheddar in an even layer, leaving about 1/4 inch clear at the edges to prevent overflow. Top with the two white cheddar slices arranged to cover gaps so the sandwich melts evenly. If using, add the sliced tomato on top of the cheese and tuck basil leaves on the tomato.
Cook on stovetop
Heat a nonstick or cast-iron skillet over medium-low heat for 2 minutes. Place the sandwich in the pan and cook 3 to 4 minutes on the first side. Check underside: it should be golden-brown and evenly toasted. If it browns too quickly, lower the heat. Flip the sandwich and cook another 3 to 4 minutes, pressing gently with a spatula. Reduce heat to low if cheese is not melting before the bread becomes dark.
Finish and rest
When both sides are golden and cheese is fully melted (test by gently pressing to see gooeyness), remove sandwich to a cutting board. Let it rest 1 minute to allow the cheese to set slightly, then slice diagonally or down the middle. Serve immediately.
Notes
If using thicker bread or extra cheese, cover the skillet with a lid for 30–60 seconds after flipping to trap heat and help melt. For crispier exterior, swap the internal mayo for butter and apply an extra thin smear of butter to the outside instead of mayonnaise.
