Method
Churro Waffle Batter
Preheat & Prepare
Preheat your waffle iron to medium-high heat (follow manufacturer's medium setting). Lightly brush or spray the plates with neutral oil if required by your waffle iron.
Mix dry ingredients
In a medium bowl, whisk together 1.5 cups all-purpose flour, 1 tbs granulated sugar, 1 tsp baking powder and 0.5 tsp salt until evenly combined.
Combine wet ingredients
In a separate bowl, whisk 2 large eggs until combined. Add 1 cup whole milk, 3 tbs melted unsalted butter and 1 tsp vanilla extract; whisk until smooth.
Make batter
Pour the wet ingredients into the dry ingredients and gently fold until just combined and no large streaks of flour remain. The batter should be moderately thick but pourable; if too thick, add up to 2 tbs milk. Let rest 5 minutes to hydrate the flour.
Cooking & Waffling
Cook waffles
When the waffle iron is hot, pour a portion of batter (about 1/3 to 1/2 cup depending on your iron) onto the center of the waffle plate. Close the lid and cook until the waffle is deep golden brown and crisp at the edges, about 3 to 5 minutes depending on your iron. Repeat to make 6 waffles total.
Drain and keep warm
Transfer cooked waffles to a wire rack set over a baking sheet in a 200°F (95°C) oven to stay warm and maintain crispness while you finish cooking the rest.
Finishing & Coating
Prepare cinnamon sugar
In a shallow wide bowl or rimmed sheet, combine 0.75 cup granulated sugar and 2 tsp ground cinnamon. Stir thoroughly so the mixture is uniform.
Dip in butter
Place 4 tbs melted unsalted butter in a separate shallow bowl. Working with one warm waffle at a time (hot from the oven), quickly dip both sides into the melted butter until lightly coated. Allow excess butter to drip back into the bowl for 1–2 seconds.
Coat with cinnamon sugar
Immediately press and roll the buttered waffle in the cinnamon-sugar mixture so both sides are evenly coated. Use a spatula or tongs to turn and press to ensure sugar sticks. Place coated waffles back on the wire rack to set for 1–2 minutes so the sugar forms a slightly crunchy surface.
Optional Serving Sauces
Serve
Serve churro-style waffles hot with optional chocolate sauce or dulce de leche for dipping. Spoon sauces into small ramekins alongside the waffles.
