Pretzel Preparation

Activate Yeast

In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

Mix Ingredients

Add the flour and salt to the yeast mixture. Mix until a dough forms.

Knead Dough

Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pretzels

Preheat oven to 450°F (230°C). Punch down the dough, divide it into 8 pieces, and roll each piece into a long rope. Shape into a pretzel.

Baking Soda Bath

In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet.

Egg Wash

Brush the pretzels with beaten egg.

Bake

Bake in the preheated oven for about 12-15 minutes or until golden brown.

In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until bubbly.

Slowly whisk in milk. Cook until thickened, about 3-5 minutes.
