Prepare the Ingredients

Start by chopping the prosciutto into small pieces and finely chopping the fresh herbs. Set aside.

Fry the Gnocchi

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the gnocchi and fry until they are golden brown and crispy on the outside, about 5-7 minutes. Stir occasionally to ensure even cooking.

Add Prosciutto and Peas

Add the chopped prosciutto and frozen peas to the skillet with the gnocchi. Cook for an additional 3-4 minutes, until the peas are heated through and the prosciutto is crispy.

Create the Cream Sauce

Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes until the sauce thickens slightly. Add the Grana Padano cheese, stirring until it is melted and incorporated.

Add salt and black pepper to taste. Finish by sprinkling the fresh herbs over the dish and drizzle with the remaining olive oil. Serve warm.
