Preparation of Pickled Onion

Pickle the Onions

In a bowl, combine apple cider vinegar, sugar, and salt. Add thinly sliced red onion and let it marinate for at least 30 minutes.

Romesco Sauce

Make the Romesco Sauce

In a food processor, combine roasted red peppers, toasted almonds, garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until smooth and set aside.

Gochujang Sauce

Prepare Gochujang Sauce

In a small bowl, mix gochujang, sesame oil, and honey until well combined. Set aside.

Crispy Garlic

Prepare Crispy Garlic

Thinly slice garlic cloves. Heat olive oil in a pan over medium heat, add garlic slices, and cook until golden brown. Remove and drain on paper towels.

Char Broccolini

Char the Broccolini

Preheat a grill or grill pan over medium-high heat. Toss broccolini with olive oil and salt. Grill for about 5-7 minutes until charred and tender.

Assembly

Assemble the Dish

On a plate, spread a layer of romesco sauce, top with charred broccolini, drizzle with gochujang sauce, and sprinkle crispy garlic and chopped almonds. Add pickled onions on the side.
